Here are two vegan fiber-rich recipes that support your healthy weight goals:
Creamy Polenta
Ingredients:
1 cup polenta
4 cups vegetable broth
2 tablespoons vegan butter
Salt and pepper, to taste
Instructions:
In a large saucepan, bring vegetable broth to a boil. Slowly whisk in polenta, stirring constantly to prevent lumps.
Reduce heat to low and simmer, stirring occasionally, for 20-25 minutes until polenta is thick and creamy. Stir in vegan butter and season with salt and pepper.
To serve, spoon creamy polenta into bowls and top with mushroom gravy or vegan cheese sauce. Garnish with fresh parsley and enjoy!
You can eat it while it is thick and creamy or pour the polenta into a bread pan, let it cool, then slice it, to eat with mushroom gravy or vegan cheese sauce.
Cauliflower Fried Rice
Ingredients:
1 head cauliflower, chopped into florets
2 tablespoons sesame oil
2 cloves garlic, minced
1 small onion, diced
2 carrots, diced
1 cup frozen peas
1-2 tablespoons soy sauce
Instructions:
In a food processor, pulse cauliflower florets until they resemble rice grains.
Heat sesame oil in a large skillet or wok over medium heat. Add minced garlic and diced onion, and sautΓ© until fragrant.
Add diced carrots and frozen peas to the skillet, and cook until vegetables are tender.
Stir in the cauliflower "rice" and soy sauce, and cook for 5-7 minutes, until cauliflower is tender.
Enjoy your cauliflower fried rice!
