The recipe is a wonderful amalgamation of spices, herbs, potatoes along with basmati rice. The recipe originated in the kitchen of the nawab of Lucknow Wajid Ali Shah while he was dethroned and exiled to Kolkata. The nawab was a food lover so when he was exiled he also took his kitchen and chefs to Kolkata. Scarcity of money led his Bawarchi to tone down spices and replace portions of meat which was very expensive with potatoes.
