Butter a 9x9 brownie pan.Melt dark chocolate chips and coconut milk in a saucepan over very low heat. When mixture is melted, remove from heat and stir in the eggs and vanilla.Stir in almond flour, salt, and baking soda.Fold in the semisweet chocolate chips and 1/2 cup of the chopped walnuts.Pour your batter into the greased 9x9 pan and top with remaining 1/4 cup of chopped walnuts.Bake at 350F for 20-21 minutes.Secret Ingredient Mac n CheeseAdapted from Minimalist Baker: https://minimalistbaker.com/20-minute-mac-and-cheese-vegan/#wprm-recipe-container-78078Ingredients1 1/2 cups raw cashews, soaked in water for at least 8 hours (or cover with boiling water and soak for 15-20 minutes to soften)1 box Banza elbow macaroni pastaJuice of one whole lemon2 Tbsp nutritional yeast2 cloves garlic, peeled1/4 tsp ground turmeric1/4 tsp ground chipotle pepper1 tsp saltA few twists freshly ground black pepperDirectionsDrain cashews, then pour into a high-speed blender.Cook pasta according to package instructions; reserve 1/2 cup pasta cooking water.To the blender with the cashews, add lemon juice, nutritional yeast, garlic, turmeric, chipotle, salt, pepper, and 1/2 cup of the reserved pasta water. Blend until very smooth.If the sauce is too thick for your liking, add more water.Pour the sauce into the pot with the drained pasta and stir to combine!PeasDefrost a bag of frozen peas as your fabulous veggie side! Grandma Ruth-Approved Diner Pancake Sandwiches
We’ve made it to the end of another season, which means it’s time to feed you! I hope you’re hungry for one of my mom, Becky Parr’s, newest creations inspired by “Grandma Ruth’s U.P. Truck Stop.” These Diner Pancake Sandwiches are easy, beautiful, and, of course, delicious. I hope you enjoy them as much as we did!Recipe: Diner Stuffed Pancake SandwichesIngredients2 cups pancake mix (Bisquick is what I used , and you can use the GF version)2 cups whole milk4 Tbsp vegetable oil2 eggs2 teaspoons vanilla8 oz softened cream cheeseJamPowdered sugarPecansDirectionsPreheat oven to 425F.Butter a cookie sheet.Mix up the batter, including the mix, milk, oil, eggs, and vanilla, and pour into the buttered cookie sheet. Cook for 13-15 minutes or until pancakes are golden brown and pulling away from the edges of the pan.Add 3-6 Tbsp of jam to the cream cheese and stir until combined. If using different jams, divide the cream cheese into equal portions and add the jam. I used 3 jam flavors, so I divide the block of cream cheese into 3 equal portions and added 1-2 Tbsp of each jam.When pancakes are cooled, cut into 3x3” squares.
