Happy Mother's Day to all the Carpool moms who are in the trenches of mothering! George's animal game of the day is Kelly asking how many of these animal species are left in the world: giraffes, blue macaw parrots, gorillas, polar bears, sheep, and blue whales. Set your oven to 425 and in an oven-safe dish layer spinach (fresh or frozen), tomatoes (small or quartered), garlic cloves (one per person), and ricotta cheese (¼ cup per person). Drizzle the whole thing with olive oil, put a lid on the dish, and bake for 30 to 40 minutes. Boil your pasta while it bakes. When the veggie mixture is done, smash the tomatoes and garlic and toss your pasta in. House projects and outdoor activities like a 5K run are fun, active options as the weather warms up. Kelly's excited to see the new Explorer at the NY Auto Show as well as the 2025 Infiniti QX 80. She may not get the changes she's hoping for, but we'll see!
