Tortang Talong (Filipino Eggplant Omelette)
for eggplant:3 Japanese eggplants
12 large eggs
2 tablespoons fish sauce
kosher salt and freshly ground black pepper, to taste
¼ cup olive oil
6 garlic cloves, minced
1 yellow onion, diced
for salsa:
1-2 large beefsteak tomatoes, medium diced (about 12 ounces)
1 medium cucumber, medium diced
1 small red onion, medium diced
1/4 Cup Cilantro
1 jalapeño chili diced1 tablespoon fish sauce1 lemon, juiced
3 cups cooked jasmine rice

1 Roast Yam
1 Cup Frozen, Blueberries
1/2 Cup Frozen Pineapple
1 Frozen Banana
1/4 Dried Coconut Flakes
1 T Local Honey
